Mixed Berry Overnight Oats

Ok, so it’s no secret, all you’ve got to do is take one look at my Instagram to know I’m a massive fan of overnight oats!

I mean seriously, what’s not to love?

Not only are they super quick and easy to make, but there are literally endless possibilities for different flavours and toppings, so you’ll never get bored or find yourself eating the same thing again and again.

Nutritionally, as long as you add in some protein, a delicious oat mix will keep you feeling full and energised, and be the perfect macro balanced meal to support your body composition goals.

One of my favourite combos is this Mixed Berry Overnight Oats recipe.

It’s super thick and creamy, and I just love the fresh zing the berries bring to the bowl πŸ™‚

Then wait for the ‘magic’ to happen and hey presto, you’ve got yourself a big bowl healthy deliciousness!

Mixed Berry Overnight Oats

Ingredients

  • 1 oz (30g) oats
  • 1/2 tbsp (6g) chia seeds
  • Cinnamon to taste (optional)
  • 1/2 scoop (15g) vanilla protein powder
  • 3.5 floz (120ml) unsweetened almond milk (or other nut milk)
  • 1/2 small tub (80g) 0% fat Greek yoghurt
  • 3.5 oz (100g) mixed berries (fresh or frozen)
  • 1 tbsp (12g) pumpkin seeds

Instructions

First, add the oats, protein powder, chia seeds and cinnamon to a bowl or large jar - a mason jar works well.

Gradually add the unsweetened almond milk a little at a time and continuously stir, you want to make sure there are no lumps.

Cover the bowl and place in the fridge overnight.

In the morning, top with the berries, Greek yoghurt and pumpkin seeds, stir through and enjoy.

Notes

If you don't prepare the oats the night before, don't panic! Sometimes (actually quite often!) I'm not that organised and only have time to mix up a bowl first thing in the morning. In this case, just mix them up as normal, however add a fraction more chia seeds so it thickens up faster, then pop 'em in the fridge for 30-45 mins, and by the time you've taken a shower and got yourself ready, your oats will be ready to devour πŸ™‚
