Berry Blast Smoothie Bowl

There’s nothing quite like that first spoonful of a creamy, ice cold smoothie bowl 🤤

I just love the delicious zing of fresh fruit and the crunchiness of all the toppings.

Seriously, all those textures and flavours, it’s like there’s a party going on in my mouth!

One of my all time favourite smoothie bowl creations, is this one, the Berry Blast.

Not only does it pack a punch with it’s mix of brightly coloured berries (that are crammed full of anti-oxidants and vitamins), but its high in protein and fibre too, thanks to the addition of a little vegan protein powder and some frozen cauliflower.

Yup, cauliflower, you read right.  

Now I know it sounds pretty gross, but trust me, it’s the magic ingredient that adds texture to this big bowl of deliciousness, and makes it super healthy.  So make sure you don’t miss it out!

Ingredients

  • For the base:
  • 3 oz (85g) frozen cauliflower
  • 1 oz (30g) frozen banana
  • 3 oz (85g) frozen mixed berries
  • 1/2 scoop (15g) vanilla protein powder
  • 150ml unsweetened almond milk
  • For the toppings:
  • 1 oz (30g) mixed berries (fresh or frozen)
  • 1 tbsp (10g) pumpkin seeds
  • 1 tsp (7g) bee pollen
  • 1 tbsp (10g) raw chopped cashew nuts
  • 1 tbsp (7g) unsweetened coconut chips (or flakes)

Instructions

First place all the base ingredients into your blender (except the almond milk).

Add half of the almond milk and begin to blend - be patient! You may need to pulse several times and scrap down the edges of the blender as you go. Gradually add more almond milk a little at a time to help it blend and become smooth. If you like your smoothie bowl quite thin, add lots more almond milk.

Once fully blended and silky smooth, pour into a bowl, and lovingly and artfully arrange the toppings as you desire 🙂
