Apple Cinnamon Raisin Protein Muffins

Is it just me, or is cinnamon one of those spices that makes everything taste just that little bit better?

Seriously, given half a chance, I’d probably add it to everything.

So if you are a fellow addict, I reckon you’ll dig these little cinnamon-y, apple-y, raisin-y protein muffins I concocted.

They’re super easy to make, low in sugar, high in protein and fibre and they’re going to cure that craving for all things warming and slightly spicy.

Apple Cinnamon Raisin Protein Muffins

Ingredients

  • 250g of chopped apples
  • 50g vanilla protein powder - I used Vega Clean Protein
  • 20g ground almonds/almond flour
  • 50g oats/oat flour
  • 1 large egg white
  • 1 tsp baking powder
  • 2-3 tsp cinnamon or more to taste 😉
  • pinch of salt

Instructions

First preheat your oven to 350F or 180C and spray a mini muffin tray with a little coconut cooking spray.

In a saucepan, steam 200g of the chopped apples with 1 tsp of cinnamon and a little water. This should take about 5-7 mins.

If you are using whole oats, place these in a blender and grind into a fine flour. Add the flour to a mixing bowl with the protein powder, ground almonds, baking powder, cinnamon and salt.

Once the apples are lightly steamed, transfer to your blender and pulse a few times to make apple sauce.

Bit by bit, pour the apple sauce into the dry ingredients, then add in the egg white and mix thoroughly - for ease, you can use a blender, mixer or food processor (I do!)

Next add in the remaining chopped apple - I like to use small chunks - and then add in the raisins. Mix thoroughly again.

Spoon the mixture into the muffin tray moulds and bake for about 15 mins or until lightly brown and firm around the edges. Be careful not to over bake, as the muffins can go really hard and rock like!

Enjoy freshly baked or store in an airtight container in your fridge for 5-6 days.
